Ingredients:
-1 cup buckwheat pancake mix (contains baking powder)
-1 cup water or unsweetened non-dairy milk. To make it even tastier use my banana milk recipe.
-defrosted frozen strawberries/blueberries and/or pure maple syrup
Instructions:
Put the buckwheat pancake mix in a bowl and gradually add in the non-dairy milk mixing well on occasion until it’s thick but pourable. Adjust mixture if needed by adding more liquid or mix as necessary). Pour onto a hot griddle. I bought the waffle plates that work with the Cuisinart griddle. I make 4 waffles with this. Close the lid and cook for at least 5 minutes. These are key problems for many people – not having a non-stick griddle/pan, not having it hot enough and not waiting long enough to open the lid. They should be crispy on the outside but not burned of course. 🙂
You can add real maple syrup (not the fake stuff) or what I do sometimes is defrost some frozen unsweetened strawberries and blueberries, which creates a nice syrup. Add ground flaxseed, cinnamon, nutmeg or whatever else you’d like!
Sometimes I add a little vanilla as well as a pinch of baking powder and tsp of apple cider vinegar. Don’t really see a big difference though.
