Ingredients:
-1 cup buckwheat pancake mix (contains baking powder)
-1 cup water or unsweetened non-dairy milk. To make it even tastier use my banana milk recipe.
-defrosted frozen strawberries/blueberries and/or pure maple syrup
Instructions:
Put the buckwheat pancake mix in a bowl and gradually add in the non-dairy milk mixing well on occasion until it’s thick but pourable. Adjust mixture if needed by adding more liquid or mix as necessary). Pour onto a hot griddle. I bought the waffle plates that work with the Cuisinart griddle. I make 4 waffles with this. Close the lid and cook for at least 5 minutes. These are key problems for many people – not having a non-stick griddle/pan, not having it hot enough and not waiting long enough to open the lid. They should be crispy on the outside but not burned of course.
You can add real maple syrup (not the fake stuff) or what I do sometimes is defrost some frozen unsweetened strawberries and blueberries, which creates a nice syrup. Add ground flaxseed, cinnamon, nutmeg or whatever else you’d like!
Sometimes I add a little vanilla as well as a pinch of baking powder and tsp of apple cider vinegar. Don’t really see a big difference though.
