I love this simple recipe. Nothing fancy is really needed, the beans taste so good!
Ingredients:
1 large yellow onion, diced
2 cloves of garlic, minced/pressed (use garlic press ideally)
1/2 cup of black bean juice (from can or keep juice if cooking dry beans)
2 tsp of vegetable stock powder (or replace some of the bean juice with vegetable broth)
2 cups of cooked black beans
1/2 cup fresh cilantro, diced (optional)
1 jalapeno pepper, diced (optional)
Dry fry onion (no oil or water) in a pot until they’re getting brown, then add the liquid and other ingredients. Cook until the broth reduces and thickens up. If too dry add more black bean broth (or water if you don’t have any).
